A Delicious Recipe for Cheese Kimchi Fried Rice

With just a few simple ingredients and plenty of savory flavor, cheese kimchi fried rice is sure to be a hit at your next meal! It’s the perfect combination of spicy and cheesy, with a bit of crunch from the kimchi. Give it a try tonight for a tasty way to spice up your dinner routine!

Gather the Ingredients.

For this recipe, you’ll need cooked rice (jasmine, basmati, or sushi rice), kimchi, cheese of your choice (cheddar, mozzarella and feta all work well), garlic, onion, sesame oil and optional toppings like eggs for a complete meal. Make sure to have these ingredients ready before you begin

Prep the Kimchi and Onion.

Start by preparing the kimchi and onion. Drain the kimchi of its excess brine and then mince it into small pieces. Slice the onions into thin strips, making sure not to chop them too fine. Add these to a heated pan with some sesame oil, stirring until fragrant before removing from heat and setting aside.

Cook the Rice.

Move on to the cooked rice. Place two cups of pre-cooked short-grain rice in a large bowl and sprinkle with half teaspoon of sea salt, gently folding the ingredients together before adding to the pan. Saute the rice in sesame oil, stirring continuously until well combined – this should take around three or four minutes. Once thoroughly cooked, add in the kimchi, onion and one tablespoon of vegetable stock before stirring to combine all of the ingredients into a homogenous mixture.

Mix in the Vegetables, Cheese, and Spices.

Add one cup of frozen mixed vegetables to the pan, and stir gently until cooked through before adding a quarter teaspoon each of ground black pepper, garlic powder, and sesame seeds. Sprinkle two tablespoons of grated cheese over the ingredients and mix together until evenly spread throughout. Allow the mixture to cook for another two minutes before stirring through one tablespoon of gochujang paste, creating a fragrant and flavorful dish.

Fry Up your Fried Rice!

Heat a tablespoon of cooking oil in a pan over medium heat. When the oil is hot, add two cups of cooked short-grain or jasmine rice to the pan and fry until golden, stirring frequently. Add two finely diced garlic cloves then begin adding the kimchi – if using fresh kimchi, start by adding one cup; if using pickled kimchi, start with two tablespoons and increase gradually once fully blended in. Stir through until all ingredients are evenly combined.
