An Easy Guide to Making Vegetable Bibimbap

Delight your taste buds with this flavorful, veggie-packed version of vegetable bibimbap! This classic Korean dish combines a variety of sautéed vegetables and rice for a delicious, nutrient-filled meal that’s simple to make in the comfort of your own home

Gather the ingredients.

To make your vegetable bibimbap, you’ll need a variety of vegetables such as red bell pepper, spinach, mushrooms, onion, carrots, bean sprouts and zucchini. You’ll also need some cooked rice, sesame oil, salt and pepper for seasoning. Finally, you’ll top off the dish with some gochujang (Korean chili paste) for a flavorful kick!

Roast the vegetables.

Preheat your oven to 350°F (176°C). Cut the bell pepper, onion and zucchini into thin slices and spread them out on a baking sheet. Drizzle with a bit of sesame oil and season it with salt and pepper. Roast the vegetables in the oven for 15-20 minutes, until they are golden brown and tender.

Prepare the rice and toppings.

In a medium pot, combine 1 cup of jasmine rice and 2 cups of water. Bring to a boil, cover the pot and reduce the heat to low. Simmer for 15 minutes until the liquid is absorbed, then fluff with a fork. Meanwhile, prepare your toppings by thinly slicing 1 cucumber into small pieces, as well as grating 2 carrots. Toss together with sesame oil and season with salt and pepper. Set aside until ready to use.

Plate each bowl of bibimbap

Divide the cooked jasmine rice among four plates or bowls. Arrange the cucumber, carrot, and any other vegetable toppings in attractive patterns across the plates– don’t forget some spring onions for garnish! Drizzle each bowl with 1 tablespoon of sesame oil and soy sauce if desired. Enjoy your homemade bibimbap warm or chilled, depending on your preference.
