Gather the Ingredients.

To make cheese kimbap, you will need kale, carrot, seaweed, spam or other red meat, spam mayonnaise (optional), Korean rice cake mix or sushi mix, eggs, and cheese of your choice. You will also need some sesame oil to keep the kimbap rolls moist and sticky. Once you have all the ingredients prepared, you are ready to start cooking!

Cook the Rice and Prepare the Kimbap Wrapper.

Begin by cooking the rice according to the directions on the package. You can also add spices or sauces to make it more flavorful. Once the rice is cooked, pour it into a nonstick bowl and mix 1 tablespoon of sesame oil with 1 teaspoon of salt. This will be used to bind the kimbap wrapper together and keep it moist. Spread a thin layer of this mixture over 2 sheets of seaweed wrap and set aside for later use.

Prepare and Cook the Cheese Filling.

To make the filling, cook 1 cup of diced vegetables of your choice in a pan. Once they are softened, add a block of cream cheese and 1/2 cup of grated mozzarella. Stir until the cheeses have melted and combined with the vegetables. Finally, season with salt and pepper to taste. When finished, transfer the mixture onto a plate to cool down before using it as the filling for kimbap.

Assemble the Kimbap.

On a sheet of gim or seaweed, spread 2 tablespoons of the cooked filling on one side. Place this onto the roll mat, and add 4 slices of cheese or processed cheese spread. Roll up the kimbap using the mat to keep everything tight and neat. Finally, use a sharp knife to cut it into 8-10 pieces. Enjoy!

Fry or Grill (Optional).

If you want to take your cheese kimbap to the next level, you can fry or grill it after rolling. This will give it a unique and delicious crunchy texture that’s sure to delight your taste buds. To fry, simply heat some oil in a pan over medium-high heat. Fry until lightly golden and then enjoy! To grill, preheat an outdoor grill or indoor griddle on high heat. Place the rolled kimbap onto the hot griddle and cook for 1-2 minutes per side or until golden brown.
